Ingredient List: 1/2 C. Coconut Curry Sauce (Starport 123) 2 C. Couscous 2 C. Boiling water 3/8 C. Extra virgin olive oil 3/4 C. Shredded carrots 1/2 C. Diced red onions 1/2 C. Minced parsley 1 C. Asparagus cut in 1/8” rounds

Instructions: 1. Place couscous in a pot and add in 2 C. of boiling water. Stir to mix and cover. Let sit for about 5 minutes. 2. Fluff the couscous with a fork and set aside. 3. Heat a sauté pan at medium heat and add in olive oil, then onions and sauté about 20 seconds, add in asparagus and sauté 30 seconds. 4. Add in carrots and parsley. Mix well, then add in Coconut Curry Sauce mix well and remove when steaming hot. 5. Toss in couscous and mix well.
