You can conversely change out the watermelon for fresh mango, pineapple, strawberries, peaches or papaya. There`s really no way to go wrong here! Here`s what you`ll need for your 15 Minute Baked Tilapia with Watermelon-Habanero Salsa (serves 4): Tilapia filets, seedless watermelon, red onion, habanero chile, cilantro, mint, lime.

Preheat your oven to 400 degrees. Line a baking sheet with foil and grease lightly or give a quick hit of cooking spray. Lay your filets out and season with a little salt and fresh pepper. Bake for 10-12 minutes until just cooked through. While the tilapia`s cooking make your salsa. Start by dicing the watermelon, then dice your red onion, mince the habanero, chop the cilantro and mint. Finally mix it all together, and squeeze lime over the top. Remove the tilapia filets to plates and top with the salsa. Dinner is served!

So basic but pretty right. Don`t let the habanero`s scare you. Sure they`re spicy but not nearly so much with the seeds and veins removed. They have so much citrusy flavor we just love them. If they still make you nervous, feel free to use serrano or japapeño peppers in their place.
